본 연구는 전라남도 보육시설 종사자를 대상으로 하여 전반적인 보육시설 급·간식 운영 현황, 급·간식 운영에 대한 문제점과 요구를 파악해봄으로써 보육시설의 바람직한 급·간식운영을 위한 기초 자료를 제공하고자 하였다. 이를 위해 전라남도 지역의 500개 보육시설을 대상으로 설문지를 우편으로 발송하였고 2007년 2월 5일부터 3월 3일까지 회수된 309부가 최종 분석에 사용 되었다. 연구 결과 시설 유형에 따라 급·간식 제공형태, 식단 작성 방법, 식단 전달방법, 영아·유아 식단 구분 여부, 식품 구매 담당자, 위생 관리 등에 있어서 차이가 있는 것으로 나타났다. 또한 시설 유형별로 각 보육시설의 프로그램 및 특성에 맞는 적합한 체계적인 급·간식관리 프로그램 개발, 인적 자원 활용 방안 마련 등의 요구가 있는 것으로 나타났다.

The purpose of this study was to investigate actual conditions of child care centers`s food service and find the ways of improving the quality of child-care`s food service. This study analyzed the difficulties and needs regarding the management and the quality of food service from each of different types of facilities. Self-administered questionnaires were completed by 35 national, 127 cooperate, 82 private, 60 Home and 4 others child care teachers or directors in Jeonnam Province. The results of this study were as follows. There is a quite great gap in the total number of children between public, cooperate, private and home child care centers. The result of this study shows significant difference by the types of facilities, the way of provide a meal, menu planning, classification of menu for infant and young child, food buyer and also hygiene control.
