본 연구는 세계화에 따라 1980년대 이후 대구광역시에서 외국요리 음식점의 성장과 공간 확산이 어떻게 나타나는지를 밝혀 보고자 하였다. 대구에서도 한국사회에서 전개된 외식시장의 개방, 해외여행의 자유화, 노동시장의 부분적인 개방과 같은 세계화의 영향으로 외국요리음식점이 10개에서 2008년에 328개로 급증하였다. 본 연구는 외국요리음식점의 급성장과 함께 대구의 음식문화에서 범세계적 유사성과 지방적(국지적) 다양성이 동시에 증가한 사실을 확인하였다. 또한 외국요리 음식점의 공간 확산은 도시공간구조적으로 신·구도심(중심업무지구)에 집중하는 경향이 있다는 것도 밝혔다.

This study investigates the growth and spatial diffusion of foreign cuisine restaurants in Daegu city since 1980 by virtue of globalization. As a consequence of globalization such as the openness of restaurants and fast-food market, the liberalization of overseas travel, the low level of openness in labour markets in Korea, foreign cuisine restaurants in Daegu increased from 10 to 328 in 2008. It is identified that the global similarity and local diversity of food culture in Daegu increase simultaneously with the rapid growth of foreign cuisine restaurants. And also it is revealed that the spatial diffusion of foreign cuisine restaurants in Daegu tends to concentrate at the old and new downtowns (CBD) in terms of urban spatial structure.
