본 연구는 어린이 단체급식 운영 효율성 비교분석을 위해 의정부시 지역의 유치원과 어린이집을 대상으로 실증적으로 분석하고자 하였다. 또한 어린이집 단체급식에서 중요하게 관리되고 있는 식품위생, 영양균형, 친환경 식재료, 특이요리방법(생선조리) 등을 중심으로 선행 연구를 토대로 조사하였다. 설문대상은 의정부 지역 어린이집·유치원의 급식조리사와 보육교사 200명 중 172명의 종사자를 대상으로 설문지를 수집하여 분석하였다. 분석을 통해 식생활 교육 및 활동, 식재료에 대한 이해, 식품위생과 안전, 생선조리 시 처리방법(생선조리)로 어린이 단체급식 운영 효율을 위한 요인 4가지로 압축하였다. 위 4가지 변수와 결혼여부, 직장형태, 직무형태, 연령, 근무연수 등과의 차이분석 결과 서로 영향을 주고 있는 것으로 분석되었다. 따라서 어린이집·유치원의 급식 조리사, 보육교사는 각자의 업무가 서로 교차업무로 관심을 가질 때 효율적 급식 경영을 만들 수 있는 것으로 사료된다.

This study conducted a comparative analysis on food service management in daycare centers to improve operation efficiency of the food management. For the analysis, a survey of 172 related staffs (cook, teachers) working for daycare centers in Ui-jeong-bu was taken from June 1st. 2016 to 15th and used Frequency analysis, reliability analysis, factor analysis, T-test and ANOVA analysis. Based on correlation analysis, four main variables were deducted from survey results : education on dietary life, food hygiene and food safety, understanding of food ingredients, and fish cooking(cook guidelines). Additional analysis was conducted to measure the relationship between four variables above and characteristics of staffs. It was observed that marriage status, workplace type, job character, working yeras of staffs in daycare centers have impacts on education on dietary life, food hygiene and safety, understanding of food ingredients, and fish cooking(cook guidelines). Therefore, cook and teachers in daycare centers show interests in each job`s function and it indicates the feasibility of Foodservice management.
