본 연구는 레토르트식품과 같은 간편식 냉동식품들의 소비가 증가해 가는 과정에서, 냉동식품을 홈쇼핑이나 온라인쇼핑몰, 소셜커머스 등과 같은 온라인 유통망을 통하여 구매하는 소비자들의 식생활 안전을 확보하기 위한 목적에서 연구되었다. 우리나라 냉동식품 택배배송은 해당 업체들이 냉장·냉동 시스템을 갖춘 차량을 이용하지 않고, 라스트 마일 배송을 실시하고 있기에 냉동식품이 배달되는 동안 신선도를 유지하는데 어려움이 있다. 이러한 문제점들을 최소화하기 위하여 현재 우리나라의 택배업체들은 스티로폼 아이스박스와 아이스팩으로 냉장·냉동 차량을 대신하여 냉동식품의 안전성을 유지하고 있지만, 궁극적으로는 택배업체들이 냉동식품의 유통 전 과정에서 제품의 신선도를 유지하는 콜드체인시스템을 도입하여 운영해 나가는 것이 가장 이상적인 해결책이 될 수가 있다. 그렇지만 콜드체인시스템의 도입은 결국 생산자의 비용부담 및 물류비의 증가를 초래하게 되며, 궁극적으로 소비자 가격에 영향을 미칠 수 있기에 어려움이 따른다. 본 연구에서는 콜드체인시스템이 아직 완벽하게 제공되지 못하는 과도기적 상황 하에서, 우리나라 냉동식품의 시장 현황과 함께 냉동식품에 대한 택배배송 현황을 분석하였으며, 우리나라 유통사 및 택배사의 냉동식품 판매 및 배송 분야의 실무담당자들을 대상으로, 냉동식품의 포장 및 택배배송과 관련된 FGI 조사 및 택배배송 실험 분석 등을 실시하였다. 이러한 조사 결과를 바탕으로 현재 우리나라 냉동식품의 포장 과정 및 배송과 관련된 현황들을 이해함과 동시에, 업계들이 안고 있는 문제점들을 바탕으로 우리나라 냉동식품에 대한 택배배송에 대한 안전성 확보에 대한 개선방안들을 제시하였다.

This study aimed at figuring out the way to secure food safety for online channel consumers purchasing convenient cold-stored and frozen food products like retort food through home shopping TVs, online shopping malls, and social commerce. Many Korean delivery companies supply their last-mile delivery using ordinary trucks instead of freezer trucks resulting in difficulties in securing freshness of cold-stored and frozen food. To cope with these difficulties many Korean delivery companies rely on styrofoam boxes and ice packs, a cold chain system including freezer trucks would be the ideal solution for the safety of cold-stored and frozen food. But a cold chain system comes with increased cost burden for producers and delivery service companies leading to a pressure for consumer price raise. The author analyzed the situations in the cold-stored and frozen food market and delivery service practices for cold-stored and frozen food. The author then performed FGIs with industry practitioners in cold-stored and frozen food distribution and delivery service sectors. Based on the understandings from these researches, corrective action plans were suggested to solve the potential problems with cold-stored and frozen food delivery service industry in Korea.
