커피는 우리의 일상 속에 깊숙이 자리하고 있지만, 커피 성분에 대한 긍정·부정 효과를 충분히 인지하지 못하고 있는 실정이다. 본 연구의 실증적 결과를 바탕으로 올바른 음용습관과 음용문화를 형성하여 건강하게 커피를 소비할 수 있는 정보를 제공하고자 한다. 본 연구에서는 저온 추출 조건을 갖는 12 개 샘플의 분석을 사용하여 항산화물질인 클로로겐산 함량의 차이를 비교하고 분석 하였다. 그 결과 12 개의 추출물 중 비 알코올 그룹은 탄산수 'Sigram'을 사용하여 추출한 경우 클로로겐산의 추출량이 2757.01 mg / l로 가장 높았으며, 알코올 그룹은 국내 소주 'Cham-essul Fresh'추출시 추출 된클로로겐산의 양은 2767.48 mg / l로 리터당 최대값이 되었다. 이러한 결과는 올바른 음용 습관을 제시하고 도출된 과학적 자료에 근거하여 커피 교육 분야 및 신제품 개발에 활용될 수 있다. 후속연구에서도 다양한 추출변수에 따라 추출된 성분의 분석과 함께 각 그룹의 관능 평가 연구를 병행해야 할 필요가 있다.

Coffee is deep in our daily lives, but we are not fully aware of the positive and negative effects on coffee ingredients. Based on the empirical results of this study, we aim to provide information that can consume coffee safely by forming the right drinking habits and drinking culture. In this study, the difference in the content of chlorogenic acid, an antioxidant, was compared and analyzed using the analysis of 12 samples with cold brew coffee extraction conditions. As a result, among the 12 extracts, when the non-alcohol group was extracted using carbonated water'Sigram', the extraction amount of chlorogenic acid was the highest with 2757.01 mg/l, and the alcohol group had an amount of chlorogenic acid extracted when extracting'Cham-essul Fresh', a domestic so-ju, the extraction amount of chlorogenic acid was the highest with 2767.48 mg/ ㅣ. These results suggest correct drinking habits and can be utilized in the field of coffee education and new product development based on derived scientific data. In the subsequent studies, it is necessary to perform the sensory evaluation study of each group together with the analysis of the extracted components according to various extraction variables.
